Fig Goat Cheese Pizza

I was really in the mood for something sweet last evening. This pizza hit the spot. The flavors went so well together. This recipe was inspired by Del’s cooking twist.


  • 3 figs sliced
  • organic spinach
  • 1 half cup of goat cheese
  • 3 slices blue cheese
  • 1/3 cup good quality honey
  • 5 springs of fresh thyme
  • 1/3 cup red onion sliced
  •  1 package of pizza yeast. I buy Fleischmann’s pizza yeast. Or you can make your own
  • 1 1/2 teaspoons sugar
  • 3/4 teaspoon sea salt
  • 1 and 3/4 cups all purpose flour
  • 2/3 cup very warm water
  • 3 tablespoons olive oil


Preheat oven to 425.

Pizza dough

To prepare pizza yeast as directed on pizza dough package.  combined 1 cup all purpose flour, undissolved yeast, sugar and salt in a large bowl. Add water and oil. mix until well blended, about 1 minute. Add gradually, enough remaining flour to make a soft dough ball. Dough ball will be slightly sticky. Knead on a floured surface adding additional flour if needed, until smooth and elastic, about 4 min. Pat dough with floured hands to fill greased pizza pan or roll dough on a floured counter to 12-inch circle.

For toppings

Heat honey in microwave for 20 sec or till melted. Add 3 fresh thyme springs to honey mix. Top pizza with spinach, red onion, goat cheese, blue cheese, figs and remaining thyme springs. pour honey mixture over pizza. lightly coat the crust with olive oil. Place in oven for 35 min or until crust is lightly brown.
